Our 20- and 40-pound variety packs include a mixture of steaks, roasts and ground beef, with one third to one half ground beef. We try to take into account your preferences (more ground beef, fewer roasts, etc.) when we put them together, depending what we have available. |

A quarter averages 95 to 110 pounds of meat, which will fit in 4 to 5 cubic feet of freezer space. We sell mixed quarters, so you get a full range of cuts, not just the front or back. If you buy two quarters (a side) before it's cut by the butcher, you can decide many specifics about how it is processed: specific cuts you want or don't want, thickness of steaks, size of roasts, how lean and how much ground beef. You can also save money by having it wrapped in freezer paper instead of vacuum packed. If you buy a quarter in advance, we'll try to have it cut according to some of your basic preferences. |

The price of a mixed quarter depends on the size of the animal and how the meat is packed. The basic charge is $3.65 per pound hanging weight, plus 40 or 60 cents a pound for paper or vacuum packing. A quarter of an average sized animal (600 pound hanging weight, or 150 pounds per quarter) costs $610 or $640, depending on wrapping. You would get about 100 pounds of 'take home' meat. Hanging Weight and Take Home Weight The weight of the meat before it is aged and processed into individual cuts is called the hanging weight. The price of a quarter is based on this weight ($4.05 or $4.25 a pound).The amount of 'take home' meat averages 2/3 of the hanging weight. That doesn't include soup bones, liver and organ meats which you can take if you want. What Happens To The Other Third? Some of the hanging weight is lost when moisture evaporates during the dry aging process, which tenderizes the meat and brings out the flavor. The rest is the bone and fat that are removed when the meat is cut into pieces. How much is lost depends on factors like how many boneless cuts there are and how lean the ground beef is. |

You can buy our meat at our farm as mixed quarters or sides, or in various packages described below. If you just want a few pieces, you can go to one of the several stores that sell our meat. (See Stores.) Our farm is at 28 Keziah Lane, outside of Westtown in the Town of Minisink, Orange County. We're close to the borders of both New Jersey and Pennsylvania, about 15 or 20 minutes from Middletown, Port Jervis, Warwick and Sussex New Jersey - a little over an hour from the George Washington Bridge. We encourage people to come here so you know where your food comes from. We don't ship, but if you can't make it to the farm we could try to arrange a delivery. All of our meat is dry aged to tenderize it and enhance the flavor. Then it is cut, vacuum packed and immediately frozen. |
